Guagnano, Italy (Gastrosofie). This small winery is a jewel-case where the winemakers are dedicated to produce an excellent Salice Salentino from their own Negroamaro and Malvasia Nera grapes, a special cru from nearby vineyards. For this wine cellar originated from the restoration of an old workplace that with simplicity and finesse acquired an post-industrial style and was enriched with a fascinating wall painting, the last part of the trilogy “Germinazioni” by Ercole Pignatelli. The underground pools were transformed into an inextricable labyrinth of corridors and niches, that now holds the barrel cellar and the private collection of Claudio Quarta composed of archaeological finds from the Magna Graecia period.
